Muffin Monday 02 – Lavender Muffins with chocolate

The task for the second Muffin Monday had been a little more difficult than the first one. I have to confess, that making uncommon Muffins is rare for me.

Muffins are something quick and easy, for an unexpected visit or as a small present for a invitation.
Extraordinary and complex was only allowed for cakes, pies and desserts for me so far… but not Muffins, they had to be simple.

So this had to be a entire new domain for me, but I have to confess, that even uncommon Muffins are made quick and not complex. They will be served more often now, the “make you go *Ooooohhhhh*“ Muffins 🙂 …. I.e. rice pudding Muffins, courgette Muffins with chocolate, pumkin Muffins and so on.

But for the start I do hope that my lavender Muffins with chocolate will animate you to bake them too and to elicit you a huge *Oooohhh*

Title: Lavender muffins with chocolate

150 grams Whole milk chocolate
100 grams Butter
1 Egg
200 ml Milk
150 grams Sour cream
50 grams Sugar
250 grams Flour
2 teasp. Starch flour
2 teasp. Baking powder
1/2 teasp. Baking soda
2 tablesp. Dried lavenderflowers
1 tablesp. Honey
3 drops 100% pure lavender oil
(or lavender honey)

Prepare the muffin forms or create from parchement paper 12 forms and tie them up with kitchen yarn.

Chop up the chocolate fine. Melt the butter with 50 grams chocolate on low heat.

Stir the egg, milk, sour cream and sugar. Stir the flour with the starch flour, baking powder, baking soda and one dash salt as well.

Stir the egg mass with the flour mass shortly, until all incredients are moistly.

Stir 1/4 dough with the lavenderflowers, the honey and the oil.

Mix the chocolate butter with the chocolate beneath the rest of the dough.

First fill the chocolate dough in to the forms, followed by the lavender dough.

Insert them to the oven at mid height, at 180°C for approx. 25 minutes. Bake them golden brown.
